Recipe: Squash breakfast casserole

1 large zucchini squash, cut into small pieces
1 large onion, cut into small pieces
6 eggs
1 tsp powdered garlic
1 cup of diced ham (or meat of choice, or skip it for vegetarians)
1 cup of low fat cheddar
olive oil

Pre-heat your oven to 350.
Saute the onion in a little olive oil, at least until the pieces are clear.
Saute the zucchini until tender. Drain to remove any excess water.
Grease a 9x13 pan with olive oil.
Mix the 6 eggs together in a large bowl. Stir in the squash, onions, garlic and ham.
Pour the contents of the bowl into the baking pan.
Sprinkle cheese over the top.
Bake until done. :) My test: stick a knife into the middle of the pan, if the knife blade comes out without any raw egg on it, the casserole is done.
